I am always on the hunt for new crockpot recipes, especially once school has started and the weather is starting to cool down. They just make life so much easier! I love that I can prep everything in the morning and it will be ready to go once dinner time rolls around. This Slow Cooker Meatball Pot Roast is the perfect crockpot meal to make on a cold day!  What is meatball pot roast? It is a dish made with meatballs and vegetables, cooked in a slow cooker.  This particular recipe uses frozen meatballs, so it is perfect for those days when you don’t have time to make homemade meatballs. Serve this homemade pot roast over some creamy mashed potatoes, and you have a meal that the whole family will love! 

Prepping this crockpot meatball pot roast is such a breeze! Did I mention that you can use frozen, store-bought meatballs? It makes this recipe so simple! To start making this slow cooker meatball pot roast, you’ll layer your carrots, potatoes, and onions in the bottom of the slow cooker. I like to have these chopped up the night before to make the morning a little easier. Next, you’ll spread out the frozen meatballs on top of the veggies. In a separate bowl, you’ll whisk together the beef broth, tomato paste, bouillon cubes, onion soup mix, salt, pepper, and garlic powder until combined. This is what really gives this pot roast the cozy flavor that you’re looking for! Pour this mixture over the top of everything in the slow cooker. Now the hard work is done and you can just let this slow cooker meatball pot roast recipe cook. Before you’re ready to eat, take the meatballs out of the slow cooker and make a cornstarch slurry (cornstarch and water). Pour this into the slow cooker in mix until the sauce is nice and thick. All that’s left to do is add the meatballs back in, stir, and serve! 

Ingredients to Make Easy Meatball Pot Roast

Russet potatoes – Make sure these are cut into bite-size pieces.

Carrots – You can use whatever carrots you have on hand for this dish.

Yellow onion – Go ahead and cut the onion into chunks.

Bag frozen homestyle meatballs – You can use homemade meatballs for this recipe, we’re using frozen to save time!

Carton beef broth – We like using beef broth in this recipe, but you can use chicken broth if you prefer.

Beef bouillon cubes – This will help to boost the pot roast flavor.

Tomato paste – Adds a bit of acidity and sweetness to the dish.

Lipton onion soup mix – This is a key ingredient in this dish, don’t skip it!

How to Make Slow Cooker Meatball Pot Roast

Step 1: Spray inside of the slow cooker with nonstick cooking spray.

Step 2: Layer chopped potatoes, carrots, and onions in slow cooker.

Step 3: Evenly place frozen meatballs on top of veggies.

Step 4: In a medium size mixing bowl whisk beef broth, tomato paste, bouillon cubes, onion soup mix, salt, pepper, and garlic powder until combined. Pour over meatballs.

Step 5: Cover and cook on low for 6-8 hours, or high for 4-5 hours or until potatoes and carrots can be pierced with a fork. Be careful not to overcook or potatoes will be mushy.

Step 6: Once cooked, remove meatballs and set aside.

Step 7: In a cup whisk cornstarch and cold water until smooth.

Step 8: Pour cornstarch slurry into slow cooker and stir until slightly thickened.

Step 9: Add meatballs back to slow cooker and stir well to coat meatballs.

Step 10: Serve immediately with chopped parsley if desired.

    How to Store Leftover Slow Cooker Meatball Pot Roast

    Fridge: This meatball pot roast will last 3-4 days in the fridge.

    Freezer:  Cooked meatball pot roast can be frozen for 2-3 months.

    Reheating: When ready to eat, reheat in the microwave or on the stove until warmed through.

    Popular Substitutions & Additions

    This pot roast is delicious as is, but there are a few variations that you can try!

    • If you want a little spice in your pot roast, add some red pepper flakes when cooking the vegetables.
    • For a creamier pot roast, stir in sour cream or heavy cream when making or reheating the dish.
    • Try serving this pot roast over some egg noodles instead of mashed potatoes!

    Yes, you can! Frozen green beans are a great addition to this dish. Just add them during the last hour of cooking.

    What kind of potatoes should I use for this recipe?
